Matthew's pre-school are producing a Kids Recipe Book in time for Easter and parents have been asked to supply favourite recipes. I thought that we'd send in the Smartie Cookie recipe. Matthew and I have just baked a batch, had to make sure that the quantities were all correct before submitting it! Thought that I may as well share it with you too.
Smartie Cookies Makes about 20 cookies
Ingredients
- 4oz (100g) Butter, softened
- 4oz (100g) Muscovado Sugar
- 1 tbsp Golden Syrup
- 6oz (150g) Self Raising Flour
- 3oz (75g) Smarties (about 3 tubes)
- Heat Oven to 160° C (fan oven), 180° C (conventional) or Gas Mark 4.

- Beat in syrup.
- Add flour and smarties and mix thoroughly.
- Divide and shape into balls in hands, gently press down onto a baking tray covered with greased proof paper. Space well apart.
